Crystals in my dates?
I eat these organic Medjool Dates in Arizona that were on sale at the Co-op for months, they keep moving through. Towards the last two thirds of their life on the shelves, they start to turn lighter in color and have their skin and harden off of the flesh in places. In addition, these crystals as hard as things as the dates, usually close to the skin. Sometimes a slight bitterness is associated with them. Either it went completely or I am totally used to it. It is as hard crystals form in good aged Gouda, only in a sweet rather than fatty medium. Is it mold? Am I gross? It's actually really, really good!
No, it sounds like crystallized sugar, which sometimes forms when the fruit is dried.
